Ingredients
Fetta, watermelon and olive bites
- 2 tablespoon finely chopped mint
- 1 tablespoon finely chopped parsley
- 1 long chili, seeds removed, finely chopped
- 200 gram low-fat feta, thinly sliced into 48 triangles
- 600 gram watermelon, skin removed, cut into 48 x 1 cm thick triangles
- 24 toothpicks
- 24 whole pitted black olives
Method
Fetta, watermelon and olive bites
- 1In a small bowl, combine the mint, parsley and chili and stir to combine. Toss each piece of feta in the herb mixture to coat.
- 2Thread an olive onto each toothpick. Then thread on alternate pieces of watermelon and feta. Chill, covered until ready to serve.
