Ingredients

Fetta, watermelon and olive bites
  • 2 tablespoon finely chopped mint
  • 1 tablespoon finely chopped parsley
  • 1 long chili, seeds removed, finely chopped
  • 200 gram low-fat feta, thinly sliced into 48 triangles
  • 600 gram watermelon, skin removed, cut into 48 x 1 cm thick triangles
  • 24 toothpicks
  • 24 whole pitted black olives

Method

    In a small bowl, combine the mint, parsley and chili and stir to combine. Toss each piece of feta in the herb mixture to coat.

    Thread an olive onto each toothpick. Then thread on alternate pieces of watermelon and feta. Chill, covered until ready to serve.
