Method
1.Put mint, parsley and chilli in a small bowl, and stir to combine. Toss each piece of feta in the herb mixture to coat.
2.Thread alternate layers of feta and watermelon on to toothpicks, finishing each with an olive. Chill until ready to serve.
Note
- If preferred, make the seasoning mix into a marinade by adding 2 tablespoons olive oil.
