Fennel and lemon-crumbed mozzarella burgers in grilled parmesan buns

Ingredients

  • Zest and juice 1 lemon
  • 1 tbsp caster sugar
  • 1/2 red onion, thinly sliced
  • 1/4 cup flour
  • 2 eggs, lightly beaten
  • 1 1/2 cups panko crumbs
  • 1 tsp fennel seeds
  • 350 g mozzarella, cut into 4 x 1.5cm-thick slices
  • Olive oil, for cooking
  • 1 cup finely grated parmesan
  • 4 brioche burger buns, halved
  • Chilli jam, aioli, lettuce leaves, to serve

Method

    Combine lemon juice and sugar in a bowl, add the onion and mix to coat the onion. Set aside to pickle.

    Take 3 bowls: combine the flour with some salt and freshly ground black pepper in one, put the egg in another, and combine the crumbs, whole fennel seeds and lemon zest in the last bowl.

    Preheat oven grill to high.

    Heat a drizzle of oil in a large frying pan over medium heat. Cook mozzarella for 2-3 minutes on each side, or until golden brown and cheese has melted.

    Meanwhile, scatter parmesan over the cut side of the bun bases and place on an oven tray with bun tops, all cut side up. Grill for 3-4 minutes or until cheese has melted and buns are golden brown.

    Assemble buns with the crumbed mozzarella, drained pickled onion, chilli jam, aioli and lettuce.
