Feijoa, lemon and coconut muffins

Delicious feijoa, lemon and coconut muffins that are great for a picnic basket, or as an anytime snack!

Ingredients

  • 5 feijoas
  • juice and zest of 1 lemon
  • 100 gram melted butter
  • 3/4 cup caster sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1.5 cup self-raising flour
  • 1 cup coconut
  • 1 teaspoon baking soda
  • 1 teaspoon mixed spice
  • pinch of salt
TOPPING (optional)
  • 1/4 cup caster sugar
  • zest of 1 lemon

Method

    Preheat oven to 190°C.

    Line a 12-hole muffin tin with paper cases (or grease the holes).

    In a blender or food processor bowl, whizz the feijoas, lemon juice, zest, melted butter, sugar, egg and vanilla until smooth.

    In a bowl, add flour, coconut, baking soda, mixed spice and salt, stirring with a whisk to combine.

    Pour over feijoa mixture and mix until just combined. Do not overmix.

    Three-quarters fill each muffin hole with mixture.

    For the topping, mix together caster sugar and lemon zest, then sprinkle a little over each muffin.

    Bake for 15-20 minutes or until a skewer comes out clean.

Notes

Lining your muffin tins with baking paper squares or cupcake cases makes washing up so much easier!
