Fancy lettuce, blueberry, goats’ cheese and barbecued peach salad
This delicious salad recipe marries crunchy lettuce, fresh blueberries, creamy goats' cheese and sweet grilled peaches to create a gorgeous summer side dish

Ingredients
- 3 ripe peaches, halved and stones removed
- 1/2 x 120g bag Krispkut Fancy Lettuce Blend
- 1 cup fresh blueberries
- 1/3 cup pistachio nuts, roughly chopped
- 60 gram goats’ cheese, diced
Dressing
- 4 tablespoon Saladds Balsamic Vinaigrette
- salt and freshly ground black pepper
Method
- 1To make the dressing, place the Saladds Balsamic Vinaigrette in a bowl, season and mix.
- 2Preheat the grill or barbecue to high. Brush some of the dressing over the cut side of the peach halves. Barbecue the peaches, cut side down (or cut side up if cooking under the grill), for about five minutes, or until the peaches are soft and lightly charred. Set aside.
- 3Toss the dressing through the Krispkut Fancy Lettuce Blend and serve on a platter. Slice the peaches and add to the platter with the blueberries, pistachios and goats’ cheese. Toss everything together with the remaining dressing and serve.
