Falafel patties with spiced mayonnaise

Falafels are a great way to introduce a vegetarian meal to your kids. They are tasty and filling, and can be used to make mini burgers and wraps too.

Ingredients

Falafel patties
Green salad
Pickles
Spiced mayonnaise

Method

1.Roll the falafel mixture into even-sized patties about 5cm round.
2.Heat a heavy-based pan or grill pan and place a piece of baking paper inside it. Spray the patties with oil and cook on the paper for 4-5 minutes each side until heated through.
3.To make the green salad, combine the cabbage, cucumber and parsley, tossing well. Keep chilled.
4.For the pickles, toss the finely sliced vegetables with the combined spiced vinegar, sugar, oil and seeds, then marinate for 10-15 minutes.
5.In a small bowl, whisk the mayonnaise with the lemon juice and season with the Moroccan seasoning.
6.Serve the patties in individual dishes with green salad, pickles and a little mayonnaise.
