Egg-free cookies

Crumbly, golden and full of juicy sweet cherries, these baked cookies are made without eggs for those with allergies and are perfect for a mid-morning treat.

Ingredients

Method

1.Preheat oven to 180°C (160°C fan-forced). Lightly grease and line 2 baking trays with baking paper.
2.Sift flour and custard powder together into a bowl. Stir in sugar. Using fingertips, rub in butter, until mixture resembles coarse breadcrumbs.
3.Stir in milk and chopped cherries. Form into balls. Arrange on prepared tray, about 2cm apart. Flatten slightly using a floured fork. Top each cookie with a piece of cherry.
4.Bake 10-12 minutes, until golden. Cool on tray 5 minutes. Transfer to a wire rack to cool completely. Serve.

If preferred, you can replace the glace cherries with sultanas, chocolate bits or nuts (if allowed).
