Method

1.Place eggs in a small saucepan; cover with cold water. Bring to the boil over moderate heat, gently stirring (this helps centre the yolks). Boil without stirring for 8 minutes; drain. Refresh under cold water. Peel; quarter. Set aside.
2.Meanwhile, heat oil in a large deep frying pan over moderate heat. Add onion and bacon; cook and stir for 3 minutes or until onion is soft. Add garlic; cook and stir for 30 seconds or until fragrant.
3.Add carrot, zucchini and peas to pan; cook and stir for 3 minutes or until soft. Add rice and sauce; cook and stir for 2 minutes or until combined and heated. Remove pan from heat. Stir in half the coriander.
4.Serve fried rice topped with egg and remaining coriander.

You can cook 1 ½ cups long-grain white rice instead of using microwave rice. To make gluten-free, use tamari (wheat-free soy sauce) instead of teriyaki. Use parsley instead of coriander.
