Method
1.In a large saucepan, combine stock, juice, fish sauce and star anise. Bring to the boil on high. Reduce heat to low; simmer 5 minutes.
2.Meanwhile, prepare noodles following packet instructions. Drain well.
3.Divide noodles among serving bowls. Top with raw beef slices, sprouts, herbs, onion and chilli. Ladle hot stock over, sprinkle with fried shallots. Serve with extra fish sauce and lime wedges.
Freeze beef fillet for 30 minutes until just firm, to make it easy to slice very thinly.
