Method

1.In a saucepan, heat oil on high. Sauté onion for 2-3 minutes until tender (see tip). Add chicken and cook, stirring, for 2-3 minutes until well browned.
2.Stir rice, tomato, water, zucchini and herbs through (see tip). Bring to the boil, then simmer, covered, for 15-20 minutes until rice is tender.
3.Set pan aside, covered, for 5 minutes. Fluff rice with a fork, then stir parsley through. Serve with salad and crusty bread.
  • Add crushed fresh garlic with the onion for added flavour. – Remove woody herbs such as bay leaves from rice before serving. – If preferred, use pork in place of the chicken thigh fillets. – For a little heat, add some smoked paprika with the onion in Step 1.
