Method
1.Place fish in a bowl with lemon juice, chopped mint and honey. Season with salt and black pepper.
2.Preheat a grill on medium. Thread fish onto skewers, alternating with capsicum and olives. Grill skewers, 6 minutes, turning halfway until lightly browned and fish is just cooked through.
3.Serve skewers with lemon wedges, scattered with extra mint leaves.
You could serve easy fish skewers with basmati rice, or couscous, if you like.
