Easy enchiladas

Mexican dinners are always popular with the family. This recipe for enchiladas is tasty, easy and sure to become a new favourite at your place.

Method

1.Preheat oven to 200°C. Lightly grease a large, shallow, ovenproof dish.
2.Heat oil in a large frying pan on high. Cook mince, stirring to break up lumps, for 5-6 minutes, or until browned. Add onion and capsicum and cook for 2-3 minutes, or until onion softens.
3.Stir in tomato paste, paprika and chilli powder and cook for 2-3 minutes, or until fragrant. Add beans and half the pasta sauce. Simmer for 4-5 minutes. Cool slightly.
4.Spoon mince mixture evenly down centre of each tortilla. Roll up to enclose filling and place side by side in prepared dish as you work.
5.Pour remaining pasta sauce over enchiladas. Sprinkle with cheeses and dried herbs. Bake for 25-30 minutes, or until golden and bubbling.

Leftovers? This dish freezes well, so save it for another night. For a delicious change, serve the mince mixture with rice, topped with salsa, grated cheese, corn chips and sour cream.
