Method

1.Preheat oven to 210°C and grease a baking tray.
2.In a large frying pan, heat the oil and cook the onions for around 15 minutes, stirring from time to time until very soft. Add apples and cook for a further 5 minutes or until they are starting to become tender.
3.While the onion is cooking, dust bench with flour. Roll pastry out to 22cm x 32cm. Transfer to baking tray and score a 1cm border around the edge with a knife, taking care not to cut all the way through the pastry. Prick base with a fork. Brush edges with beaten egg, if using.
4.Stir the mustard into the crème fraîche and spread over the base. Top with onion and apple mixture and bake for 25 minutes or until pastry is dark golden and crisp. This can be served warm or cold.
