Easter truffles

The truffles can be made ahead of time and stored in the fridge to serve with coffee and the newspaper, or a good book.

Ingredients

Method

1.Heat cream until just simmering then remove immediately from the heat.
2.Add chocolate and leave for 5 minutes.
3.Mix until silky smooth then place in the fridge until firm (around 20-30 minutes).
4.Use two teaspoons to form mixture into balls (aim for about 25) and roll in the chopped walnuts.
5.Keep in an airtight container in the fridge, but bring to room temperature before serving, so they are silky soft.
