Easter bun and apple bake
This is pure comfort food. Layers of spiced bun and apple baked with a vanilla custard makes for a moreish treat.

Easter bun and apple bake
- 50 gram butter
- 6 hot cross buns
- 2 apples, peeled and thinly sliced
- 1 cup milk
- 1 cup cream
- 2 eggs
- 4 teaspoon caster sugar
- 1 teaspoon vanilla extract
- pinch mixed spice
- extra caster sugar, for sprinkling
Method
Easter bun and apple bake
- 1Preheat oven to 150°C. Generously grease an oven-proof dish with some of the butter, selecting a dish that the buns will fit into quite snugly.
- 2Slice each bun vertically into thirds and lay out in the dish, overlapping each slice.
- 3Between each piece, place a slice of apple and sprinkle on a few more slices over the top.
- 4Heat the milk and cream together to trembling stage – nearly boiling.
- 5While it heats, whisk the eggs and sugar together in a bowl until light and creamy. Add the vanilla and mixed spice. Add the hot milk/cream to the egg mix and whisk until combined. Pour over the buns and leave for 15 minutes to allow them to absorb the custard mixture.
- 6Dot the top with the remaining butter, then bake for 30-40 minutes or until puffed up and golden on top.
- 7Serve warm in bowls with whipped cream or ice cream (or both!).
Notes
This is a great recipe to use up stale hot cross buns.
