Method

1.Preheat oven to 180°C.
2.Heat a little oil in a large frying pan over medium-high heat. Prick sausages a couple of times and add them to the pan to brown all over, then set aside in a casserole dish.
3.Tip any fat from the pan, then replace with butter and olive oil. Add onions and cook for 5 minutes until starting to colour. Add leek and cook for another 10 minutes until soft. Add garlic and cook for another 2 minutes.
4.Add chicken stock, tomatoes, tomato paste, chutney, vinegar, mustard and spices. Simmer for a few minutes, stir through the cornflour and water mixture, then pour over the sausages.
5.Cover and bake in the oven for 1 hour. Remove cover, then increase oven temperature to 210°C and cook for another 15 minutes.
6.Remove from the oven and season with salt and pepper. Serve with mashed potato, kumara, couscous or pasta.
