Deep-fried Snickers bars

  • 12 fun-size snickers bars
  • 1 cup self-raising flour, sifted
  • 300 millilitre cold soda water
  • 1/2 teaspoon salt
  • vegetable oil for deep-frying
  • icing sugar to dust
  • ice cream to serve

    Freeze Snickers bars for 30 minutes until firm.

    In a medium bowl, combine flour, soda water and salt until smooth.

    In a large, heavy-based saucepan, heat oil until a little batter sizzles when added – around 160°C.

    Coat Snickers in batter, draining off excess. Deep-fry in three batches for 1-2 minutes each, turning with a slotted spoon, until golden.

    Drain on a paper towel, then dust with icing sugar and serve with scoops of ice cream.
