  • 2 cup (180g) rolled oats
  • 1 cup (150g) plain flour
  • 1 cup (160g) wholemeal flour
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon caster sugar
  • 1 cup (140g) dates, coarsely chopped
  • 1/2 cup (55g) walnuts, coarsely chopped
  • 1 3/4 cup (430ml) buttermilk
  • butter, to serve

    Preheat oven to 190°C. Grease a baking tray.

    Process oats until fine. Combine oats, flours, baking powder, bicarbonate of soda, sugar, dates, walnuts and 1 teaspoon salt in a large bowl.

    Stir in buttermilk until mixture forms a ball. Turn out onto a floured surface and knead into a 28cm loaf. Using a small knife, make five 1cm-deep slashes across top of loaf. Place on prepared tray. Bake for 1 hour.

    Wrap in a clean tea towel to cool, so bread remains moist. Cut into thick slices and serve with butter.
