Date and oat loaf
  • 1 1/4 cup self-raising flour
  • 1 teaspoon mixed spice
  • 3/4 cup brown sugar
  • 3/4 cup chopped pitted dates
  • 1/2 cup rolled oats, plus 1 tablespoon extra
  • 125 gram butter, melted
  • 1/2 cup milk
  • 2 eggs
  • butter, to serve

Method

    Preheat oven to moderate, 180°C. Lightly spray a 10 x 20cm loaf pan with cooking oil and line with baking paper.

    Sift together flour and mixed spice into a large bowl. Stir in sugar, dates and oats.

    In a jug, whisk together butter, milk and eggs. Lightly mix into flour mixture until well combined.

    Spoon mixture into prepared pan. Sprinkle with extra oats. Bake for 50-55 minutes or until a skewer inserted into the centre comes out clean and dry.

    Allow to cool in the pan for 5 minutes. Transfer to a wire rack to cool completely. Slice and spread with butter to serve.
