Lemon icing
Method
1.Preheat oven to moderate, 180°C. Lightly grease an 18 x 28cm slice pan. Line base and sides with baking paper, extending sides 2cm above pan edge.
2.Sift flour into a large bowl. Stir through coconut, dates, sugar and zest. Blend in butter and egg, mixing well.
3.Spread mixture into prepared pan. Bake for 30-35 minutes until firm and golden. Cool in pan.
4.Lemon icing: Meanwhile, in a bowl, combine all ingredients, stirring until smooth. Spread over cooled slice. Sprinkle with extra coconut and lemon zest. Put aside to set. Serve cut into squares. Store in an airtight container.
