Curried turkey with yoghurt

Ingredients

  • 2 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 garlic, cloves, crushed
  • 500 gram turkey mince
  • 2 roma tomatoes, chopped
  • 1 tablespoon curry powder
  • 2 tablespoon garam masala
  • 1 cup water
  • 1 cup frozen peas, thawed
  • 2 tablespoon yoghurt, plus extra to serve
  • 1/3 cup coriander, roughly
  • 1 butter lettuce, leaves separated

Method

    In a large frying pan, heat oil on high. Saute onion and garlic 1-2 minutes, until onion is tender. Add turkey, brown well 4-5 minutes, breaking up all lumps.

    Stir in tomatoes, curry powder and masala. Cook 1-2 minutes.

    Add 1 cup water, bring to simmer on low. Cook, uncovered, 4-5 minutes, stirring occasionally. Mix in peas and cook 1 minute to heat through.

    Remove from heat. Stir in yoghurt and coriander. Serve in lettuce cups, sprinkled with extra coriander. Accompany with extra yoghurt.
