Curried sausages with cauliflower mash

Ingredients
Curried sausages with cauliflower mash
- 400 gram kumara, cut into 2 cm pieces
- 350 gram cauliflower, cut into small florets
- 1 tablespoon vegetable or olive oil
- 8 lean beef sausages
- 1 medium brown onion, finely chopped
- 2 tablespoon bought korma curry paste
- 2 teaspoon plain flour
- 1/2 cup frozen peas
- 20 gram butter
- 1/3 cup milk
Method
Curried sausages with cauliflower mash
- 1Place kumara in a steaming basket over a saucepan of simmering water: steam for 10 minutes. Add cauliflower; steam for 8 minutes or until tender.
- 2Meanwhile, heat half the oil in a large frying pan over moderate heat. Add sausages; cook and turn for 8 minutes or until browned. Transfer to a plate. Add remaining oil to pan.
- 3Add onion; cook and stir for 4 minutes or until soft. Add curry paste and flour; cook and stir for 1 minute.
- 4Gradually stir in 1 1/2 cups water. Bring to the boil. Return sausages to pan with peas; cook. covered, over moderate heat for 4 minutes or until sausages are cooked.
- 5Drain potato and cauliflower. Return to pan with butter and milk. Using a stick mixer, blend until smooth. Serve sausages with mash.
Notes
Kumara is orange sweet potato.
