Curried prawn baguette

This is my version of a po’ boy, the Louisiana sandwich that is stuffed with fried shrimp or oysters and plenty of spicy mayo. My baguettes crammed with garlic prawns and creamy curry mayo will be a sure hit!

Method

1.Mix mayonnaise with sour cream, curry powder, lemon zest, salt and pepper. Adjust seasonings to your taste.
2.Fry garlic and prawns in a hot pan (or on a barbecue grill plate) with a combination of butter and oil, until cooked through.
3.Fry the potato slices in a little oil, if using, until golden.
4.Slice the bread lengthwise and butter. Stuff with lettuce, prawns, potato slices and drizzle with mayo.
5.Serve with extra mayo, lemon wedges and plenty of serviettes!

Keeping a bag of prawns in the freezer is a life-saver when you need an easy entertaining idea. If you need them to go around a crowd, thread them onto skewers with cubes of bread buttered with garlic butter before banging them on the barbecue to cook.
