Ingredients

Curried chicken and peach salad
  • 3 250g chicken breast fillets
  • 1 tablespoon vegetable oil
  • 1 tablespoon garam masala
  • 4 papadums
  • 4 ripe peaches, halved, stoned, sliced
  • 1 red onion, thinly sliced
  • 1 ripe avocado, sliced
  • 1 bunch coriander, leaves picked
  • 1 long red chilli, seeded, sliced
  • 1 lime, juice, plus wedges to serve lime

    In a bowl combine chicken, oil and spice. Toss to coat chicken well.

    Heat a large frying pan or barbecue on medium. Cook chicken 5-7 minutes each side, until cooked through. Rest, covered, 5 minutes.

    Meanwhile, microwave each pappadam on high (100% power) for 45 seconds until puffed and crisp.

    On a large platter combine peach, onion, avocado, coriander and chilli. Drizzle with juice and season to taste. Toss gently.

    Thinly slice chicken breast. Fan over salad. Serve with pappadums and lime wedges.
