Curried chicken and peach salad
This fresh summer salad recipe combines tender spiced chicken with juicy peaches

Ingredients
Curried chicken and peach salad
- 3 250g chicken breast fillets
- 1 tablespoon vegetable oil
- 1 tablespoon garam masala
- 4 papadums
- 4 ripe peaches, halved, stoned, sliced
- 1 red onion, thinly sliced
- 1 ripe avocado, sliced
- 1 bunch coriander, leaves picked
- 1 long red chilli, seeded, sliced
- 1 lime, juice, plus wedges to serve lime
Method
Curried chicken and peach salad
- 1In a bowl combine chicken, oil and spice. Toss to coat chicken well.
- 2Heat a large frying pan or barbecue on medium. Cook chicken 5-7 minutes each side, until cooked through. Rest, covered, 5 minutes.
- 3Meanwhile, microwave each pappadam on high (100% power) for 45 seconds until puffed and crisp.
- 4On a large platter combine peach, onion, avocado, coriander and chilli. Drizzle with juice and season to taste. Toss gently.
- 5Thinly slice chicken breast. Fan over salad. Serve with pappadums and lime wedges.
