Curried cauliflower parcels

These fragrant cauliflower parcels are easy to make and are wonderful served alongside a tasty roast lamb or beef dish.

Ingredients

Method

1.Preheat oven to 200°C (180°C fan-forced). Place 4 x 30cm squares of foil on a flat surface. Top with 4 x 30cm squares of baking paper.
2.Divide cauliflower, garlic, curry powder and onion among sheets of paper; ensure mixture is centred. Dot with butter. Sprinkle with vinegar. Season. Close paper and foil around cauliflower mixture to seal. Place parcels on a baking tray.
3.Bake 35-40 minutes or until cauliflower is tender. Stand parcels 5 minutes before serving.

You can prepare several hours ahead; cover and chill. To cook with roast, place dish on bottom shelf of oven for last 30 minutes of meat cooking time. While roast is resting, continue to cook parcels for 5-10 minutes as recipe directs.
