Crunchy tuna salad

A healthy tuna salad with lots of crunch, perfect for lunch or lunchboxes.

Ingredients

Dressing
  • 1 lime, juiced
  • 1 tablespoon peanut oil
  • 1 tablespoon palm sugar
  • 1 tablespoon soy sauce
  • 1 long red chilli, finely sliced
  • 1 clove garlic, crushed
Crunchy tuna salad
  • 395 gram can, flaked tuna, drained
  • 50 gram baby spinach leaves
  • 1/4 cup snow-pea sprouts
  • 50 gram carrot, cut into matchsticks
  • 1 lebanese cucumber, cut into batons
  • 1 bunch mint leaves
  • 1/3 cup crushed peanuts
  • 1/3 cup ginger, peeled, thinly sliced

Method

Crunchy tuna salad
  • 1
    In a large bowl, combine tuna, spinach, sprouts, carrot, cucumber, mint, peanuts and ginger.

    In a jug, whisk all dressing ingredients together. Toss dressing through tuna salad and serve.

Notes

Swap tuna for salmon or shredded cooked chicken. For extra flavour, add 1 teaspoon sesame oil.
