Crunchy tuna salad
A healthy tuna salad with lots of crunch, perfect for lunch or lunchboxes.

Ingredients
Dressing
- 1 lime, juiced
- 1 tablespoon peanut oil
- 1 tablespoon palm sugar
- 1 tablespoon soy sauce
- 1 long red chilli, finely sliced
- 1 clove garlic, crushed
Crunchy tuna salad
- 395 gram can, flaked tuna, drained
- 50 gram baby spinach leaves
- 1/4 cup snow-pea sprouts
- 50 gram carrot, cut into matchsticks
- 1 lebanese cucumber, cut into batons
- 1 bunch mint leaves
- 1/3 cup crushed peanuts
- 1/3 cup ginger, peeled, thinly sliced
Method
Crunchy tuna salad
- 1In a large bowl, combine tuna, spinach, sprouts, carrot, cucumber, mint, peanuts and ginger.
- 2In a jug, whisk all dressing ingredients together. Toss dressing through tuna salad and serve.
Notes
Swap tuna for salmon or shredded cooked chicken. For extra flavour, add 1 teaspoon sesame oil.
