Tender pieces of chicken contrast with crunchy cashews, sprouts and toasted pepitas to create this healthy and delicious meal.

Ingredients
Soy dressing
- 1/4 cup (60ml) soy sauce
- 1/3 cup (80ml) rice vinegar
- 2 tablespoon peanut oil
- 2 teaspoon brown sugar
- 1 teaspoon sesame oil
Crunchy chicken salad
- 3 cup (480g) shredded cooked chicken
- 1 small (700g) chinese cabbage, sliced thinly
- 2 green onions (green shallots), sliced thinly
- 100 gram crunchy combo sprouts
- 1/2 cup firmly packed fresh coriander leaves
- 1/2 cup (75g) salted cashews
- 2 tablespoon toasted pepitas (pumpkin seeds)
Method
Crunchy chicken salad
- 1Place all soy dressing ingredients in a screw-top jar; shake well.
- 2Place salad ingredients in a large bowl. Add soy dressing; toss gently.
