Spiced mayonnaise
Method
1.On a large plate, combine breadcrumbs and spices. Place flour and buttermilk in separate bowls. Cut turkey lengthways into 8 equal strips.
2.Toss turkey in flour, shaking off excess. Dip into buttermilk, then breadcrumb mixture to coat. Place on a plate. Cover with plastic food wrap; chill for 15 minutes.
3.Meanwhile, make mayonnaise: whisk all ingredients together in a small serving bowl.
4.In a large, heavy-based saucepan, heat oil over moderately high heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-fry turkey in batches for 2-3 minutes, or until golden brown and cooked. Using a slotted spoon, transfer to paper towels.
5.Serve turkey with mayonnaise and lemon wedges.
Dried Japanese breadcrumbs (known as panko) are available from the Asian foods aisle. You can use packaged dried crumbs; texture and colour will vary.
