Method

Preheat oven to 180°C.

Cut croissants in half and place them on an oven tray. Bake for 5 minutes or until they are crisp.

3.

Whisk eggs, cream and chives in a bowl. Season with salt and pepper. Pour mixture into a heated, greased, nonstick frypan and stir gently over medium heat until egg is just set but still creamy.

4.

Spread a little Dijonnaise over base of croissants, then top with smoked salmon and scrambled egg.

  • This brekkie is best enjoyed while still warm.
