Crispy salmon fillets on braised lentils
- 4 cup water
- 1 cup australian green lentils
- 2 tablespoon olive oil
- 15 gram butter
- 2 rindless bacon rashers, chopped
- 1 onion, finely chopped
- 1 clove garlic, crushed
- 1/2 cup chicken stock
- 2 tablespoon snipped chives
- 4 salmon fillets
- rocket leaves, to serve
- lemon wedges, to serve
Method
Crispy salmon fillets on braised lentils
- 1Combine water and lentils in a saucepan. Bring to the boil. Reduce heat to low. Simmer 15-20 minutes, until just tender. Drain well.
- 2Heat olive oil and butter together in a saucepan. Saute bacon, onion and garlic 2 minutes. Stir in cooked lentils and chicken stock. Simmer 4-5 minutes. Blend in chives and season to taste.
- 3Spray a hot pan with oil. Cook 4 salmon fillets for 3-4 minutes, each side, until cooked to taste. Serve with braised lentils, rocket leaves and lemon wedges.
