Crispy salmon fillets on braised lentils

Ingredients

Crispy salmon fillets on braised lentils
  • 4 cup water
  • 1 cup australian green lentils
  • 2 tablespoon olive oil
  • 15 gram butter
  • 2 rindless bacon rashers, chopped
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 1/2 cup chicken stock
  • 2 tablespoon snipped chives
  • 4 salmon fillets
  • rocket leaves, to serve
  • lemon wedges, to serve

Method

Crispy salmon fillets on braised lentils

    Combine water and lentils in a saucepan. Bring to the boil. Reduce heat to low. Simmer 15-20 minutes, until just tender. Drain well.

    Heat olive oil and butter together in a saucepan. Saute bacon, onion and garlic 2 minutes. Stir in cooked lentils and chicken stock. Simmer 4-5 minutes. Blend in chives and season to taste.

    Spray a hot pan with oil. Cook 4 salmon fillets for 3-4 minutes, each side, until cooked to taste. Serve with braised lentils, rocket leaves and lemon wedges.
