Crispy goujons with chilli lime mayonnaise
Spice and citrus combine in this delicious mayonnaise which accompanies a family favourite: seafood goujons.

Crispy goujons with chilli lime mayonnaise
- 3/4 cup (225g) good quality mayonnaise
- 1 tablespoon lime juice
- 1 clove garlic, crushed
- 1 fresh small red chilli, seeded, chopped finely
- 500 gram skinned whiting fillets
- vegetable oil, for deep-frying
- 3/4 cup (110g) self-raising flour
- 1/2 teaspoon salt
- 1 cup (250ml) chilled soda water
- lemon or lime wedges, for serving, optional
Method
Crispy goujons with chilli lime mayonnaise
- 1Combine the mayonnaise, lime juice, garlic and chilli in a small bowl.
- 2Remove larger bones from fish, then slice diagonally into thin strips.
- 3Heat oil in deep-fryer or wok to 180°C.
- 4Place flour and salt in a medium bowl. Make a well in the centre and whisk in the soda water until combined. Dip fish in flour mixture in batches and deep-fry until browned lightly and cooked through; drain on a wire rack.
- 5Serve fish with mayonnaise mixture and lemon or lime wedges, if desired.
Notes
Not suitable to freeze. Not suitable to microwave.
