Creamy raspberry smoothie

Cashews are high in iron, zinc, fibre, protein and monounsaturated fat, good for heart health. Raspberries are high in vitamin C and antioxidants and have a beneficial effect on cardiovascular health and reducing cancer risk.

Method

1.Place cashews in a medium bowl; cover with cold water. Stand at room temperature for 2-4 hours. Drain well.
2.Place coconut water, drained cashews and remaining ingredients in a high speed blender until smooth. Blend on high speed for about 1 minute or until smooth and creamy.

Suitable to freeze.
