Creamy chicken and mushroom rigatoni

Pasta is the ultimate comfort food. Wholegrain mustard gives this easy chicken and mushroom dish a flavour boost.

Ingredients

Creamy chicken and mushroom rigatoni
  • 375 gram packet rigatoni
  • 300 millilitre carton thickened cream
  • 2 chicken breasts, chopped
  • 2 tablespoon wholegrain mustard
  • 200 gram button mushrooms, thinly sliced

Method

Creamy chicken and mushroom rigatoni

    Cook rigatoni in a large saucepan of boiling, salted water according to packet instructions. Drain well and return to pan.

    Meanwhile, heat a little oil in a large frying pan on high. Cook chicken for 3-4 minutes or until browned. Remove chicken from pan.

    Saute‚ mushrooms in same greased pan for 3-4 minutes or until tender. Blend in cream and mustard. Return chicken to pan.

    Bring to boil. Reduce heat and simmer for 4-5 minutes until sauce thickens slightly and chicken is cooked through. Season to taste.

    Toss cream sauce through pasta. Serve topped with parsley, if desired.

Notes

You can use any pasta you prefer. Accompany with salad leaves and crusty bread, if liked.
