Creamy cauliflower soup with cheesy garlic loaf

Ingredients

Creamy cauliflower soup with cheesy garlic loaf
  • 50 gram butter
  • 1 tablespoon extra-virgin olive oil
  • 1 onion, chopped
  • 2 shallots, chopped
  • 2 celery sticks, chopped
  • 4 garlic cloves, peeled
  • 700 gram cauliflower, washed and finely chopped
  • 4 1/2 cup good-quality chicken or vegetable stock
  • 1 1/2 cup cream, plus extra to serve
  • 1 1/2 teaspoon ground nutmeg
  • 1 teaspoon ground white pepper
  • 1 pinch cayenne pepper or chilli (optional)
  • 3/4 cup freshly grated parmesan
  • squeeze of lemon juice
  • chopped fresh chives to serve
Cheesy garlic loaf
  • good quality bread loaf or buns
  • 50 gram butter, softened
  • 4 clove garlic, crushed
  • 1/4 cup parsley, finely chopped grated cheese

Method

Creamy cauliflower soup with cheesy garlic loaf

    Preheat oven to 200˚C and line an oven tray with baking paper.

    In a large soup pot, heat butter and oil over a medium heat. Add onion, shallots, celery and garlic. Cook, stirring every now and then for about 15 minutes until soft.

    Add cauliflower and stock. Cover and simmer for about 15-20 minutes until cauliflower is soft. Add cream, nutmeg, pepper and cayenne. Simmer for another 5 minutes. Stir through cheese to melt. Add lemon to taste before seasoning with salt.

    Meanwhile, prepare cheesy garlic loaf. (see recipe below)

    To serve, ladle soup into bowls, scatter with chives and add a splash of extra cream. Serve with cheesy garlic loaf.
Cheesy garlic loaf

    Cut bread in 2.5cm slices (don’t cut all the way through).
  • 7
    In a small bowl, combine butter, garlic and parsley together with a pinch of salt.
  • 8
    Evenly spread mixture on the cut slices. Top bread with grated cheese and bake for 5-10 minutes until the cheese melts and the bread is just crusty.
