Creamy cauliflower soup with cheesy garlic loaf

Creamy cauliflower soup with cheesy garlic loaf
- 50 gram butter
- 1 tablespoon extra-virgin olive oil
- 1 onion, chopped
- 2 shallots, chopped
- 2 celery sticks, chopped
- 4 garlic cloves, peeled
- 700 gram cauliflower, washed and finely chopped
- 4 1/2 cup good-quality chicken or vegetable stock
- 1 1/2 cup cream, plus extra to serve
- 1 1/2 teaspoon ground nutmeg
- 1 teaspoon ground white pepper
- 1 pinch cayenne pepper or chilli (optional)
- 3/4 cup freshly grated parmesan
- squeeze of lemon juice
- chopped fresh chives to serve
Cheesy garlic loaf
- good quality bread loaf or buns
- 50 gram butter, softened
- 4 clove garlic, crushed
- 1/4 cup parsley, finely chopped grated cheese
Method
Creamy cauliflower soup with cheesy garlic loaf
- 1Preheat oven to 200˚C and line an oven tray with baking paper.
- 2In a large soup pot, heat butter and oil over a medium heat. Add onion, shallots, celery and garlic. Cook, stirring every now and then for about 15 minutes until soft.
- 3Add cauliflower and stock. Cover and simmer for about 15-20 minutes until cauliflower is soft. Add cream, nutmeg, pepper and cayenne. Simmer for another 5 minutes. Stir through cheese to melt. Add lemon to taste before seasoning with salt.
- 4Meanwhile, prepare cheesy garlic loaf. (see recipe below)
- 5To serve, ladle soup into bowls, scatter with chives and add a splash of extra cream. Serve with cheesy garlic loaf.
Cheesy garlic loaf
- 6Cut bread in 2.5cm slices (don’t cut all the way through).
- 7In a small bowl, combine butter, garlic and parsley together with a pinch of salt.
- 8Evenly spread mixture on the cut slices. Top bread with grated cheese and bake for 5-10 minutes until the cheese melts and the bread is just crusty.
