Creamy banana and apricot sandwich

Naturally sweet, this tasty sandwich is spread with mashed banana in place of butter and stuffed with chopped dried apricots to create a quick and healthy lunchbox snack.

  • 8 slices wholegrain bread
  • 4 bananas, mashed
  • 2/3 cup (100g) chopped dried apricots

Method

    Spread four slices of bread thickly with mashed banana. Top with apricots and remaining slices of bread. Cut sandwiches in half, to serve.

Notes

To expand the kids tastes, try adding sultanas or other dried fruit instead of the apricots.
