Method

1.In a large saucepan of boiling, salted water, cook pasta following packet instructions. Drain well, reserving 1 ½ cups cooking liquid.
2.Melt butter in a saucepan over medium heat. Sauté bacon for 4-5 minutes until crisp. Add capers and lemon zest.
3.Add hot pasta (reserving one-third – see recipe below), reserved cooking liquid, lemon juice, tomatoes, sour cream and spinach. Toss until warmed through. Season to taste, then serve sprinkled with grated parmesan.

-If preferred, replace bacon with salami and add some sliced green olives or drained, flaked tuna.
