Ingredients

Couscous with peas & beans
  • 1 cup couscous
  • 1 cup boiling water
  • 2 tablespoon lemon juice
  • 150 gram trimmed sugar snap peas
  • 150 gram trimmed, halved baby beans
  • 1/4 cup olive oil
  • 1 1/2 tablespoon wholegrain mustard
  • 1/4 cup fresh chives, finely chopped

Method

    Combine couscous, lemon juice and boiling water in a medium heatproof bowl, stand for 5 minutes or until liquid is absorbed, fluffing with a fork occasionally. Cool.

    Boil, steam or microwave peas and beans, separately, until just tender, drain. Rinse each under cold water, drain. Combine olive oil and wholegrain mustard in a large bowl, add couscous, peas, beans and chives, toss gently to combine.
