Couscous, salami and vegetable salad

Ingredients

  • 1 1/2 cup couscous
  • 280 gram jar char-grilled vegetables, drained
  • 200 gram shaved salami, torn
  • 100 gram stuffed green olives, sliced crossways
  • 100 gram feta, cut into cubes
  • 3/4 cup flat-leaf parsley leaves
  • 1/3 cup basil leaves, torn
  • 1/3 cup bought italian dressing

Method

    Place couscous in a heatproof bowl. Stir in 1 &frac12 cups boiling water. Cover with plastic food wrap. Set aside for 5 minutes or until liquid is absorbed. Using a fork, fluff and separate grains.

    Add vegetables, salami, olives, feta, parsley, basil and dressing; toss gently to combine. Serve.
