Ingredients

Cornflake delights
  • 125 gram butter, at room temperature
  • 1/2 cup caster sugar
  • 1 teaspoon vanilla essence
  • 1 egg
  • 1/2 cup currants
  • 1/4 cup finely chopped red glace cherries
  • 1/2 cup desiccated coconut
  • 1 1/4 cup self-raising flour
  • 3 cup crushed cornflakes

    Preheat oven to 190°C (170°C fan-forced). Line 2 baking trays with baking paper.

    Using an electric mixer, beat butter, sugar and essence in a bowl, until pale and creamy. Add egg; beat until combined.

    Add currants, cherries, coconut and flour to butter mixture; stir until combined. Mixture will be sticky and soft. Drop 2-teaspoon measures of mixture into cornflakes; roll into balls, to coat. Transfer to prepared trays, leaving 3cm between each for spreading. Flatten slightly.

    Bake 20 minutes, swapping trays halfway through cooking, until golden. Cool on trays. Serve.
