Ingredients
Cornflake delights
- 125 gram butter, at room temperature
- 1/2 cup caster sugar
- 1 teaspoon vanilla essence
- 1 egg
- 1/2 cup currants
- 1/4 cup finely chopped red glace cherries
- 1/2 cup desiccated coconut
- 1 1/4 cup self-raising flour
- 3 cup crushed cornflakes
Method
Cornflake delights
- 1Preheat oven to 190°C (170°C fan-forced). Line 2 baking trays with baking paper.
- 2Using an electric mixer, beat butter, sugar and essence in a bowl, until pale and creamy. Add egg; beat until combined.
- 3Add currants, cherries, coconut and flour to butter mixture; stir until combined. Mixture will be sticky and soft. Drop 2-teaspoon measures of mixture into cornflakes; roll into balls, to coat. Transfer to prepared trays, leaving 3cm between each for spreading. Flatten slightly.
- 4Bake 20 minutes, swapping trays halfway through cooking, until golden. Cool on trays. Serve.
