Ingredients
Corn, chive and parmesan loaf
- cooking oil spray
- 1/4 cup olive oil
- 1/2 cup milk
- 2 eggs
- 2 cup plain flour
- 1 1/4 cup shredded parmesan
- 2 teaspoon baking powder
- 1/3 cup chopped fresh chives
- 2 x 125g can corn kernels, rinsed, drained and chopped
- 1 pinch salt
- butter, to serve (optional)
Method
Corn, chive and parmesan loaf
- 1Preheat oven to 180°C (160°C fan-forced). Spray loaf tin with oil.
- 2Whisk together olive oil, milk and eggs in jug. Combine flour, parmesan, baking powder, chives, corn and a good pinch of salt in mixing bowl. Make a well in the centre. Pour in oil mixture and stir until combined. Bring dough together with your hands.
- 3Transfer dough to prepared pan. Bake for 45 to 50 minutes or until a skewer inserted into centre comes out clean. Remove from oven and transfer to cool. Serve in slices with or without butter.
Notes
You can make this savoury loaf up to a day ahead. Store in an airtight container in the fridge.
