Corn, chive and parmesan loaf
  • cooking oil spray
  • 1/4 cup olive oil
  • 1/2 cup milk
  • 2 eggs
  • 2 cup plain flour
  • 1 1/4 cup shredded parmesan
  • 2 teaspoon baking powder
  • 1/3 cup chopped fresh chives
  • 2 x 125g can corn kernels, rinsed, drained and chopped
  • 1 pinch salt
  • butter, to serve (optional)

Method

    Preheat oven to 180°C (160°C fan-forced). Spray loaf tin with oil.

    Whisk together olive oil, milk and eggs in jug. Combine flour, parmesan, baking powder, chives, corn and a good pinch of salt in mixing bowl. Make a well in the centre. Pour in oil mixture and stir until combined. Bring dough together with your hands.

    Transfer dough to prepared pan. Bake for 45 to 50 minutes or until a skewer inserted into centre comes out clean. Remove from oven and transfer to cool. Serve in slices with or without butter.

Notes

You can make this savoury loaf up to a day ahead. Store in an airtight container in the fridge.
