Corn, broccoli and feta vegetarian quiche

For a delicious family meal, you can't go past this corn, broccoli and feta quiche recipe. All you need is 10 minutes to prep, then let the oven do its work and serve with a fresh salad. Easy as that!

  • 2 sheets frozen shortcrust pastry
  • 1 head broccoli, chopped, blanched
  • 1 cup corn kernels
  • 8 eggs
  • 1 1/2 cup cream
  • 2 onions, sliced
  • 50 gram feta, crumbled

    Heat oven to 220°C. Line a 20cm-round, 5cm-deep fluted quiche pan with pastry. Arrange broccoli and corn kernels over base.

    Whisk eggs and cream together. Season and pour into pan. Scatter with onion and feta.

    Bake for 1 hour until just set in the centre. Serve with a fresh garden salad.
