Cookies and cream
  • 1 cup cream
  • 100 gram white cooking chocolate, chopped
  • 125 gram cream cheese, at room temperature
  • 2 tablespoon icing sugar
  • 1 teaspoon vanilla essence
  • 150 gram packet cream-filled chocolate cookies, chopped

    Combine half the cream and the chocolate in a saucepan over low heat. Stir 2 minutes or until chocolate is melted and smooth (or in the microwave on High (100%) in 30-second bursts, stirring, until melted and smooth). Set aside for 5 minutes.

    Using an electric mixer, beat cream cheese, sugar, essence and chocolate mixture together until smooth. Stir for 2 minutes or until melted and smooth. Transfer to a heatproof bowl. Stand for 5 minutes.

    Beat remaining cream until soft peaks form. Fold cream into cream cheese mixture with three-quarters of the cookies.

    Spoon into 6 x 3/4-cup serving glasses. Sprinkle with remaining cookies. Chill 1 hour or until firm. Serve or cover and refrigerate for the next day.
