Coffee walnut loaf

Coffee is the perfect partner for cake, so it stands to reason that a cake containing coffee is going to be good. This loaf is topped with a simple but delicious coffee icing and sprinkled with walnuts for a fantastic crunch.

1.Preheat oven to 160°C (140°C fan-forced). Grease 14cm x 21cm loaf pan, line base and long sides with baking paper, extending paper 2cm over sides.
2.Chop half of the nuts.
3.Stir butter, sugar, milk and coffee in small saucepan over low heat until smooth. Sift flour and cinnamon into medium bowl, stir in butter mixture, egg and chopped walnuts. Pour mixture into pan.
4.Bake loaf 15 minutes. Sprinkle with remaining nuts, bake further 30 minutes. Stand loaf in pan 10 minutes, turn, top-side up, onto wire rack to cool.
5.To make coffee icing, combine the water, coffee and butter in small heatproof bowl, stir in sifted icing sugar to form a firm paste. Place bowl over small saucepan of simmering water, stir until icing is spreadable. Make coffee icing, drizzle icing over loaf.
