Coconut ice

Just like grandma used to make it, delicious coconut ice for a pretty tea party. Coconut ice is traditionally made with copha, but this version uses condensed milk, which is lower in fat and produces just-as-tasty results.

Ingredients

Method

1.Lightly grease and line base and sides of a 20cm square cake pan.
2.Combine icing sugar and coconut in a large bowl. Add condensed milk, eggwhite and vanilla extract and mix until combined.
3.Divide mixture between two bowls. Add a few drops of red colouring to one bowl and mix until combined. Spoon pink mixture into prepared pan and press down to even out. Top with white mixture, pressing down to even out. Cover and refrigerate overnight to set. Cut into 2.5cm squares to serve.

You can use green food colouring in place of red for a change, or colour some red and some green.
