Coconut almond power bars
These almond power bars make a terrific schoolbox snack for the kids!

Ingredients
Coconut almond power bars
- 2 1/2 cup cooking oats
- 1/2 cup shredded coconut
- 1 teaspoon vanilla paste
- 1/2 teaspoon sea salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup dried apricots, chopped
- 2 tablespoon almond butter
- 100 gram good quality dark cooking chocolate
- 1/2 cup raw honey
Method
- 1Preheat oven to 160°C and line a 20 x 30cm baking tray with baking paper. Mix the first six ingredients in a large bowl.
- 2Place almond butter, chocolate and honey in a heavy-based pot over a low heat. Stir until melted. Pour over the dry mix and work quickly to combine. Press into tray and bake for 30 minutes.
- 3Remove from oven and allow to cool (finishing in the fridge) before cutting into bars.
