Ingredients

Cinnamon toast with caramelised apples
  • 4 (720g) apples, peeled, cored, cut crossways into thin slices
  • 60 gram butter, plus 30g extra, softened
  • 1/2 cup (100g) firmly packed brown sugar
  • 1/4 cup (60ml) water
  • 1/4 teaspoon ground cinnamon
  • 300 millilitre thick cream (48 per cent fat)
  • 4 slice cinnamon and fruit bread
  • 1 tablespoon cinnamon sugar

    Heat 60g butter in large frying pan, add brown sugar, water and apples. Cook, stirring occasionally, until apples are just tender. Stir in the cinnamon and ½ cup (125ml) of the cream.

    Toast the bread and spread one side with the extra butter; sprinkle with cinnamon sugar.

    Serve toast with apple mixture and remaining cream, if desired.
