Cinnamon roasted plums

Nici Wickes' cinnamon roasted plums recipe would have to be the most delicious, easiest dessert you could make. The plums go all jam-like in the roasting pan - yum!

1.Preheat oven to 180°C. Butter an oven-proof dish.
2.Halve and de-stone the plums. If they are not freestone, cut each plum in half with a sharp knife, then twist open and gently ease the stone out.
3.Place the plum halves, snugly, cut-side up, in the dish. Sprinkle plenty of brown sugar over each plum, then the cinnamon. Tuck a vanilla pod amongst them.
4.Bake for approximately 30 minutes until softened and the plums have released some of their juices.
5.Serve warm with slices of grilled panettone, ice cream and whipped cream.

Serve with thick slices of grilled panettone, or other fruit bread, ice cream and cream for a fantastic dessert idea when entertaining. This is also lovely as a side for crème caramel or crème brûlée.
