Method

1.In the bowl of a pressure cooker, combine wine, caster sugar, cinnamon and vanilla bean. Stir until sugar dissolves. Add pears, standing upright.
2.Close the pressure cooker. Bring up to pressure following manufacturer’s instructions (until steam escapes at a constant rate and there is a regular hissing sound). Cook on high 6 minutes.
3.Release pressure following instructions. Set aside 10 minutes. Remove lid. Transfer pears to a plate. Set aside, covered with foil, to keep warm.
4.Transfer cooking juices to a large saucepan. Add brown sugar. Stir over medium heat until dissolved. Bring to boil. Boil 4-5 minutes, until syrupy. Pour sauce over pears. Serve with cream or ice-cream.
