Ingredients

Chunky watermelon salsa
  • 300 gram peeled, seedless watermelon, chopped
  • 1 smail white onion, finely chopped
  • 10 pitted kalamata olives, quartered lengthwise
  • 120 gram feta, chopped
  • 1/4 cup chopped mint
  • 2 tablespoon lemon juice
  • 1 tablespoon vegetable or olive oil
  • 1 fresh long red chilli, seeded, finely chopped

    Combine all ingredients in a medium bowl, tossing to mix well. Serve.
