Christmas mince slice

If you’re over making individual fiddly tarts, then give this Christmas mince slice a go.

Christmas mince slice
  • 1 cup brown sugar
  • 1 cup sultanas
  • 1 cup raisins
  • 1/2 cup cranberries
  • 1 grated apple
  • 1 orange, zest plus ¼ cup juice
  • 50 gram butter
  • 1 teaspoon mixed spice
  • 2.5 sheets ready rolled sweet short pastry

    In a medium saucepan, combine sugar, dried fruits, apple, orange zest and juice, butter and spice. Heat until dissolved, stirring occasionally, then increase the heat and simmer for 5 minutes until syrupy. Allow to cool for 30 minutes.

    Preheat the oven to 175ºC. Line a rectangle or square slice tin with baking paper, then cut each pastry sheet to fit the exact size of your tin. You may need to press the cut edges together with your fingertips to make a bottom and top sheet.

    Press the bottom sheet into the tin. Bake for 8 minutes until just set, then remove from the oven and top with the fruity mince mixture. Discard any excess liquid and top with the remaining pastry lid.

    Bake for a further 20-25 minutes until golden and firm. Allow to cool completely before cutting.
